The sous chef is the 2nd in command in the kitchen and plays a vital support role to the head chef. The sous chef will assist the head chef with many of his / her functions such as stock take, variance reporting, creating kitchen schedules, developing recipes, ensuring proper hygiene and sanitization in the kitchen and more.
