Job Summary

Main purpose of the F&B Manager is to oversee, coordinate and organise the food & beverage department, respecting our food dining concept.

Job Description/Requirements


The F&B Manager will be responsible for ensuring correct welcoming and serving of guest following the standards, respecting the food safety regulations and the budget.

In the interest of quality and customer satisfaction, you will master our product and menus in order to advise guest and make additional sales.

Objectives (Main Tasks):

Group Standards 

  1. Ensure the group brand standards are respected
  2. Enforce use of the SOP
  3. Make sure that the corporate guideline is respected


  1. Ensure individual guest are invoiced
  2. Run End of day reports
  3. Manage group payment
  4. Chase debtor
  5. Manage F&B cost control
  6. Manage cash handling

Human Resources

  1. Inspire the team
  2. Participate in the recruitment
  3. Define recruitment need
  4. Recruit employees
  5. Manage employees
  6. Manage the employee induction
  7. Manage annual performance review
  8. Manage the day to day performance
  9. Manage the team day to day
  10. Participate in the staff training
  11. Establish the training need
  12. Manage on the job training


  1. Run sales initiatives in accordance with the sales plan
  2. Develop new sales accounts
  3. Ensure company contract implementation


  1. Implement internal purchasing procedures
  2. Manage the relationship with suppliers
  3. Implement the group preferred suppliers’ agreements
  4. Select local suppliers
  5. Order product

Department Storage

  1. Manage departmental storage inventory
  2. Manage departmental inventory
  3. Manage departmental par stock level
  4. Manage stationery departmental stocks
  5. Manage crockery, glassware and cutlery departmental stocks
  6. Manage drink stock


  1. Manage group inquiries

Security & Safety

  1. Participate in the opening and closing of the department
  2. Participate in the safety & security committee
  3. Ensure employees & guest safety
  4. Ensure food hygiene compliance

Restaurant / Banqueting / Bar / Room Service

  1. Organise F&B departmental administrative tasks
  2. Design of drinks menus
  3. Ensure POS is up to date
  4. Ensure appropriate reports are printed
  5. Organise department for service
  6. Oversee the department during service 
  7. Ensure proper billing
  8. Ensure guest satisfaction
  9. Organise the after-service cleaning
  10. Ensure banqueting material storage


Qualifications and Skills

  • BSc degree/Diploma in Hospitality Management, Tourism, or relevant field is preferred
  • Prior experience (2 years) in a branded environment as a supervisor/manager in hospitality or hotel industry
  • Have 3-4 years of experience in hotel industry
  • Intermediate food hygiene HACCP
  • Management skills
  • Knowledge of health & safety procedures
  • Good knowledge of service practices
  • Understanding of menu costing
  • Ability to understand & follow guidelines
  • Conversational English
  • Ability to work with Fidelio and Micro-O.S, Excel and PowerPoint
  • Fluent in English and any other foreign language is an addition
