Summary of work environment
The branch operations consists of a series of food preparation & handling processes, and service of the prepared meals (cold and hot serves) to the guests. The food safety department is a key support function to the branch operations that ensures the meals served are prepared in a hygienic manner, safe and fit for human consumption. Reinforcement and implementation of the food safety and hygiene procedures is done through trainings, surveillance audits, sampling and laboratory testing, root cause analysis, corrective and preventive action, investigation of customer complaints and documentation related to food safety.
 
Primary Purpose and Scope For the Job
The Food safety and Hygiene Assistant plays a key role in identifying key areas of risk and gaps in branch operations for timely actions to drive continual improvement efforts in product quality, safety, process performance and optimization.
He /She oversees and implements effective food safety and hygiene measures to ensure food is prepared in a safe and hygienic manner.
He/ She is responsible for implementing food safety systems ,monitoring compliance and training to ensure food handlers are aware of their food safety and hygiene responsibilities at their functional level.
The role requires excellent analytical and communication skills, ability to identify gaps in the process, a proactive and result oriented person who keeps abreast with current developments in food science, safety and quality related matters.

DUTIES AND RESPONSIBILITIES:

Strategy/Planning

•    Cooperate and support in a cross-functional manner with all departments within the company as necessary to ensure compliance with the local regulatory requirements and international standards in food safety.
•    Work closely with R & M team to implement preventive and corrective maintenance, identify and report any deficiencies in the branch operation for appropriate action.
•    Implementation of internal and external audit schedules.

Implementation
•    Conduct branch surveillance audits as per schedule, share reports, follow up and review CAP’s arising from the same.
•    Ensure food safety documentation and records are available to the users, maintained and retrievable when required.
•    Conduct food safety and hygiene training for food handlers (induction and refresher) and help identify training needs for staff.
•    Monitor effectiveness of the pest control program and report any deficiencies for action.
•    Ensure proper sanitation procedures are implemented and monitoring of the same is done through an effective swabbing regime and appropriate action taken based on the results.
•    Carry out traceability of products as necessary.
•    Issue NCR (Non Conformance Report) for non-conforming products originating from internal and external suppliers.
•    Assist in investigating internal and external food safety related complaints.

Reporting and Evaluation
•    Timely implementation of audits, trainings and sampling schedules.
•    Prompt issuance and follow up for all NCRs.
•    Ensure pest sightings are reported to the pest control provider in a timely manner for action.
•    Timely investigation and feedback on customer complaints.
•    Ensure implementation, maintenance and sustenance of corrective actions.
•    Timely investigations of failed samples and corrective actions for the same.

Budgeting

•    Must be aware of financial implications of his/her decisions, and the overall performance of the department, and takes appropriate actions to avoid negative impact on the business.
•    Contributes to the annual budgeting effort by proposing CAPEX and OPEX relating to the department.

•    Audits –Internal /External

•    Micro testing of food , water & swabs
•    Implementation of Corrective and preventive action.
•    Customer complaints.
•    External Calibration of probe thermometers   

Performance Indicators (3-5 indicators)
•    100% implementation of internal audits schedules and follow up on CAP’s arising from the same.
•    100% implementation of food safety training schedules.
•    100% implementation of sampling schedule and corrective actions for failed samples.
•    100% follow up on all corrective action plans.
•    Reduce customer complaints as per the target percentage reduction for the year.
•    100% implementation of the calibration schedule.
 
JOB SPECIFICATIONS:

QUALIFICATIONS

Food science based degree or Diploma from a recognized institution

EXPERIENCE
•    1 years working in a QA/food safety related position in a FMCG environment or equivalent attachment experience during the course of their studies
•    Computer literate
•    Qualification or experience in ISO 22000/HACCP is an added advantage.
•    Excellent team player, pro-active, result-orientated, creative, reliable, and flexible with problem solving skills.

SPECIAL CONDITIONS OF EMPLOYMENT (Licenses, certificates, credentials, travel, Physical requirements etc.)

Driver’s License preferred.
Passport (Travel) preferred.

Core competency is fundamental knowledge, ability, or expertise in a specific subject area or skill set.
•    Strong computer skills, proficient in Word, Excel, and especially PowerPoint.
