Job Purpose
Talent Grid Africa, on behalf of our client, a leading hospitality firm, is looking for a highly disciplined and
skilled Sous Chef. The successful candidate will act as the principal assistant to the Executive Chef, helping to oversee kitchen operations, manage culinary staff, and maintain top-tier food quality across all dining outlets.
This role acts as a vital link between kitchen management and line staff, ensuring smooth day-to-day execution, strict adherence to recipes, and peak kitchen efficiency.
Key Responsibilities
• Manage and oversee daily kitchen workflows in the absence of or in coordination with the Executive Chef to ensure consistent, premium-quality culinary production.
• Perform routine station inspections, checking prep work, line presentation, flavor profiles, and adherence to established fine dining standards.
• Adhere to strict À La Carte and banquet service timelines, supervising the line to guarantee precise plating, correct portion sizes, and efficient ticket times.
• Secure and monitor food storage and inventory rotation to minimize waste, maintain freshness, and uphold the kitchen's strict cost-control goals.
• Execute daily mentorship and hands-on training for junior chefs and kitchen staff to maintain peak operational performance and consistency.
• Maintain meticulous kitchen documentation, including daily production lists, food waste logs, temperature charts, and receiving reports.
• Comply strictly with food safety regulations, including HACCP standards, global sanitation protocols, and workplace occupational safety laws.
Qualifications
✓ Degree or Diploma in Culinary Arts, Hospitality Management, or a closely related field
is mandatory.
✓ 7 years of active culinary experience within the hospitality industry, showing a clear
track record of progressive growth and responsibility.
✓ Prior experience in a senior line or junior sous chef capacity within high-end, or luxury
fine dining operations.
✓ Familiar with food costing principles, meal formulation support, and managing diverse,
high-volume kitchen brigades.
✓ Prior experience working within the coastal region or a strong willingness to relocate to
Mombasa.
