Job summary
The Bakery Technician is responsible for the installation, inspection, maintenance, troubleshooting, and repair of bakery production equipment to ensure maximum operational efficiency and minimal downtime. The role supports continuous production by implementing preventive maintenance programs, responding to equipment breakdowns, and ensuring all machinery operates safely and efficiently in accordance with company standards.

DUTIES AND RESPONSIBILITIES
Equipment Maintenance
· Perform preventive and corrective maintenance on bakery production equipment, including ovens, mixers, proofers, conveyors, slicers, packaging machines, and other processing equipment.
· Conduct routine inspections to identify potential equipment faults before they result in breakdowns.
· Repair mechanical, electrical, and electromechanical faults promptly to minimize production downtime.
· Ensure machinery operates efficiently and meets production requirements.
Preventive Maintenance
· Develop and implement preventive maintenance schedules for all production equipment.
· Maintain maintenance records, service logs, and equipment history.
· Monitor equipment performance and recommend maintenance improvements.
· Ensure timely servicing and replacement of worn or damaged components.
Troubleshooting & Repairs
· Diagnose equipment failures using appropriate testing and troubleshooting techniques.
· Respond promptly to emergency breakdowns during production.
· Coordinate major repairs with external service providers where necessary.
· Test repaired equipment to ensure optimal performance before returning it to production.
Health, Safety & Compliance
· Ensure all maintenance work complies with occupational health and safety regulations.
· Follow lockout/tagout procedures and other safe maintenance practices.
· Maintain a clean and safe maintenance workshop and production environment.
· Support compliance with Good Manufacturing Practices (GMP) and food safety requirements during maintenance activities.
Spare Parts & Inventory Management
· Monitor the availability of critical spare parts and maintenance consumables.
· Recommend procurement of replacement parts before stock levels become critical.
· Maintain accurate records of spare parts usage and equipment servicing.
· Assist in controlling maintenance costs through efficient resource utilization.
Continuous Improvement
· Identify opportunities to improve equipment reliability and production efficiency.
· Recommend process improvements that reduce downtime and maintenance costs.
· Support production teams by providing technical advice on equipment operation.
· Participate in continuous improvement and operational excellence initiatives.
Reporting & Documentation
· Maintain accurate maintenance reports, equipment service records, and breakdown logs.
· Prepare maintenance schedules and performance reports.
· Report recurring equipment failures and recommend long-term corrective actions.
· Ensure maintenance documentation is complete and readily available for audits.
KEY REQUIREMENT SKILLS AND QUALIFICATION
· Diploma in Mechanical Engineering, Electrical Engineering, Industrial Engineering, or a related technical field.
· Minimum of 5 years' maintenance experience in a manufacturing environment.
· Experience in a bakery or food manufacturing environment is an added advantage.
· Knowledge of preventive maintenance systems and industrial machinery.
· Strong mechanical and electrical troubleshooting skills.
· Good understanding of industrial automation and manufacturing equipment.
· Ability to read and interpret technical manuals, engineering drawings, and electrical schematics.
