Job Description/Requirements

Qualification
  • BSc degree/Diploma in Hospitality Management, Tourism, or relevant field is preferred
  • Have a strong working knowledge of Indian Cuisine, buffet, Fine dining and Ala carte with 3-4 years of culinary experience in a 4 star/5-star luxury hotel environment
  • Strong supervisory and communication skills
  • Food Hygiene and Safety trained
  • Enthusiastic and with outgoing personality who is very guest driven
  • Trained and has experience in HACCP and FIFO practices
 
Responsibilities
  1. Conduct daily shift briefings to kitchen colleagues 
  2. Promote a Fun/ Professional and Disciplined work environment
  3. Lead by example using Hotel: Mission, Vision & Values
  4. Support/Coach/Lead & Motivate kitchen colleagues
  5. Actively share ideas, opinions & suggestions in daily shift briefings
  6. Ensure storeroom requisitions are accurate to minimize repeat visits
  7. Ensure all kitchen colleagues are aware of standards & expectations
  8. Promote Health and Safety at all times
  9. Ensure proper hygiene as per Mombasa Municipality
  10. Ensure all grooming, spot check and temperature control sheets are filled as required
  11. Maintain cleanliness and proper rotation of product in all chillers
  12. Minimize wastage/ spoilage and ensure proper portion is well followed.
  13. Maintain consistent on the job training sessions for culinary colleagues
  14. Liaison daily with Outlet Chefs to keep open lines of communication & guest feedback
  15. Strives to maintain & improve all food preparations & presentations
  16. Strives to improve J.D.P results for Food Quality
  17. Act as an extension of kitchen managers to communicate food consistency & quality
  18. Daily checks of all mis en place to ensure freshness & quality standards
  19. Assign and follow – up tasks as dictated by business volumes
  20. Performs any other reasonable duties as required by the department head.
