The Food & Beverage Manager is a senior operational leader responsible for full accountability of food and beverage performance at Ankole Grill Limited. The role carries end-to-end responsibility for service excellence, cost control, compliance, people management, and revenue optimization across all food and beverage operations.
Position holder will be located in Nairobi, reporting to the General Manager
KEY RESPONSIBILITIES
a) Operational Leadership
- Take full ownership of daily food and beverage operations, ensuring uninterrupted, high-quality service.
- Enforce strict adherence to Ankole Grill service standards, menus, recipes, and portion controls.
- Ensure effective coordination between kitchen and front-of-house teams.
- Act as the final point of escalation for guest service issues.
b) People & Performance Management
- Provide direct leadership to all food and beverage supervisors and staff.
- Set clear performance expectations and enforce accountability.
- Conduct performance appraisals and recommend confirmations, promotions, training, or disciplinary action.
- Enforce attendance, punctuality, grooming, and conduct standards.
c) Financial Control & Commercial Accountability
- Assume full responsibility for food and beverage cost control, margins, and profitability.
- Monitor portion control, wastage, and variances.
- Review daily sales, voids, discounts, and reconciliations.
- Prepare accurate operational and financial reports.
d) Inventory, Procurement & Asset Control
- Oversee stock planning, ordering, receiving, storage, issuing, and stock takes.
- Investigate shortages, losses, and variances.
- Enforce compliance with approved suppliers and procurement procedures.
e) Compliance, Risk & Quality Assurance
- Ensure compliance with food safety, hygiene, and statutory regulations.
- Enforce cleanliness and sanitation standards.
- Identify operational risks and take corrective action.
f) Strategic Contribution & Continuous Improvement
- Contribute to menu planning, pricing, and service innovation.
- Monitor guest feedback and market trends.
- Lead continuous improvement initiatives.

QUALIFICATIONS & EXPERIENCE
Qualifications
• Degree or Diploma in Hospitality Management or related field.
• Minimum 7 years’ experience in food and beverage operations, with at least 3 years in a managerial role.
• Proven leadership and cost-control experience.
• Strong commercial and operational acumen.
• Food safety and hygiene certification (mandatory).
