Food & Beverage Cost Controller
Job summary
Responsible for managing food and beverage expenses by controlling inventory, analyzing costs, preventing waste/theft, and ensuring accurate sales/pricing, working with kitchen/F&B teams on budgets, menu costing, variance analysis, and daily POS/stock checks to maintain profitability.

Key Responsibilities
· Cost Control & Analysis: Monitor, analyze, and control food and beverage costs, wastage, and pilferage.
· Inventory Management: Oversee stocktaking, inventory levels, ordering, receiving, requisitions, and stock transfers.
· Point of Sale (POS) Audits: Verify POS transactions, voids, discounts, staff meals, complimentary items, settlements, and menu pricing accuracy.
· Reporting: Prepare daily, weekly, and monthly reports, variance analysis, cost of sales reports, and forecasts.
· Budgeting: Assist in budget preparation, forecasting, and cost strategy development.
· Menu Engineering: Participate in menu costing and pricing to ensure profitability.
· Collaboration: Work with Executive Chefs, Purchasing, F&B Managers, and Finance teams.
· Process Improvement: Identify weaknesses in control procedures and suggest improvements.

Experience and Qualifications:
· Minimum 3-4years’ F&B Cost controller experience in a 4-star hotel.
· Diploma/Degree in Hotel Management, Finance or a related field (Essential).
· Well conversant with Materials Control(MC)software and POS systems.

Salary Kshs. 25k-30k depending on the experience and qualifications.
