JOB TITLE: BUTCHER

NATURE OF JOB:  FULL TIME

SALARY: KSHS.23,000

JOB LOCATION: WESTLANDS


DUTIES AND RESPONSIBILITIES

Meat Preparation & Processing

  • Cut, trim, debone, and portion meat according to standard specifications.
  • Prepare beef, poultry, lamb, pork, and other meat products for display or kitchen use.
  • Minimize waste through efficient cutting techniques.
  • Grind, marinate, and prepare specialty cuts as required.
  • Ensure proper labeling, weighing, and packaging of products.


Quality Control

  • Inspect meat for quality, freshness, and safety.
  • Ensure proper storage temperatures are maintained.
  • Rotate stock using FIFO (First In, First Out) method.
  • Report any quality concerns or spoilage immediately.


Hygiene & Safety Compliance

  • Maintain strict hygiene and sanitation standards in the work area.
  • Clean and sanitize tools, equipment, and work surfaces regularly.
  • Adhere to food safety and health regulations.
  • Wear protective gear and follow workplace safety protocols.
  • Proper disposal of waste according to safety guidelines.


Equipment Handling

  • Operate and maintain butchery tools such as knives, saws, grinders, and slicers.
  • Ensure equipment is cleaned and safely stored after use.
  • Report equipment faults promptly.


KEY REQUIREMENT SKILLS AND QUALIFICATION

  • Minimum 3 years’ experience in a busy hotel, restaurant, or retail butchery.
  • Certificate in Food Production, Butchery, or related field (added advantage).
  • Strong knowledge of different meat cuts and preparation techniques.
  • Understanding of food safety and hygiene standards.
  • Physically fit and able to stand for long hours.
  • Ability to work under pressure in a fast-paced environment.
  • Good communication and teamwork skills.
