Job Summary

Our client, a reputable company based in Mtwapa, Kilifi, is engaged in the processing and sale of fruit pulps, concentrates, juices, and water under a well-established brand. The company is setting up a fruit dehydration plant targeting the European export market and is seeking a Production Manager to lead production operations.

Job Description/Requirements

Job Purpose


To oversee, coordinate, and manage all production activities in the fruit dehydration plant to ensure efficient operations, high product quality, compliance with food-safety standards, and achievement of daily, weekly, and monthly production targets. The role ensures optimal utilization of raw materials, equipment, staff, and resources while maintaining strict adherence to safety, hygiene, and Good Manufacturing Practices (GMPs).


Key Responsibilities


Develop and execute daily and weekly production schedules based on orders and raw material availability.


Ensure smooth operation of all dehydration processes: sorting, washing, slicing, drying, moisture testing, conditioning, and packaging.


Monitor production KPIs (yield, output, downtime, wastage, efficiency) and implement corrective actions.


Maintain continuous production flow with minimal downtime.


Oversee optimal use of production machines (dryers, slicers, conveyors, calibrators, etc.).


Ensure all production activities comply with HACCP, FSMS, GMPs, hygiene standards, and export requirements.


Work closely with the Quality Assurance team to enforce quality checks at each stage.


Monitor product quality parameters such as moisture content, texture, colour, and microbial standards.


Address quality deviations immediately to prevent waste or product rejection.


Lead and supervise production teams, ensuring clear communication of targets and expectations.


Ensure efficient use of raw materials (mangoes, pineapples, coconut, etc.) to achieve optimal yields.


Oversee proper waste management and product traceability.


Monitor functionality of all production machines and schedule preventive maintenance with the maintenance team.


Ensure compliance with environmental, health, and safety regulations.


Prepare daily, weekly, and monthly production reports for management.


Qualifications & Experience


Bachelor’s Degree in Food Science, Food Technology, or a related field.


Minimum five (5) years’ experience in food processing, with at least three (3) years in a dehydration or fruit-processing environment.


Strong knowledge of HACCP, GMP, ISO 22000, and food safety regulations.


Technical understanding of dehydration equipment and production workflows.


Experience supervising and managing production teams.
