ASSISTANT FOOD & BEVERAGE CONTROLLER
Job summary
You support the F&B Controller in keeping food and beverage costs, inventory, and revenue accurate. It’s a hands-on, entry-to-mid level role where you spend most of your time on the floor doing counts, audits, and data entry. Think of it as the training ground to become an F&B Controller.
Job descriptions & requirements
1. Inventory & Stock Control
- Conduct daily/weekly physical counts of food, beverage, and operating supplies in stores, bars, and kitchens
- Input count data into the inventory system and reconcile with system balances
- Investigate small discrepancies and report major variances to the F&B Controller
- Check storage conditions, expiry dates, and FIFO rotation
2. Receiving & Issuing Audit
- Verify deliveries against purchase orders and invoices before goods enter the store
- Audit issue requisitions from kitchen/bar to ensure proper authorization and pricing
- Monitor stock transfers between outlets for accuracy
3. POS & Revenue Checks
- Review daily POS reports for voids, discounts, and comps to check for proper approval
- Assist in reconciling cash drops and credit card settlements
- Flag missing checks or unposted revenue to the outlet manager
4. Data Entry & Reporting
- Update recipe costs and item master files when prices change
- Maintain par stock levels in the system
- Prepare daily consumption reports, waste reports, and cost sheets
- Assist in compiling data for the monthly F&B cost report
5. Compliance & Support
- Ensure SOPs for receiving, storage, and issuing are followed
- Support internal and external audits by providing documentation and counts
- Train new F&B staff on basic inventory procedures and system usage
