JOB TITLE: INDIAN CDP CHEF

JOB LOCATION; MARA RIVER


DUTIES AND RESPONSIBILITIES
Food Preparation & Production
  • Prepare and cook a wide range of authentic Indian dishes including: 
  • Curries 
  • Tandoori items 
  • Indian breads (naan, roti, paratha, etc.) 
  • Rice dishes and biryanis 
  • Vegetarian and non-vegetarian specialties 
  • Starters, chutneys, and accompaniments 
  • Ensure consistency in taste, texture, portioning, and presentation across all dishes. 
  • Follow standard recipes and preparation methods to maintain quality standards. 
  • Oversee mise en place and ensure all ingredients are prepared and available during service. 

Kitchen Operations
  • Maintain high standards of food quality, cleanliness, and kitchen organization. 
  • Ensure proper food storage, labeling, and stock rotation in line with food safety standards. 
  • Monitor freshness and quality of ingredients used in food preparation. 
  • Minimize food wastage through efficient production and portion control. 
  • Ensure all equipment and workstations are properly cleaned and maintained. 

Menu Development
  • Assist in menu planning and development of new Indian dishes and specialty items. 
  • Suggest innovative recipes and presentation ideas while maintaining authenticity. 
  • Support seasonal menu updates and special event catering requirements. 

Compliance & Hygiene
  • Adhere to food safety, sanitation, and hygiene standards at all times. 
  • Ensure compliance with health and safety regulations within the kitchen. 
  • Maintain cleanliness of kitchen areas, utensils, and cooking equipment. 
  • Follow company policies and standard operating procedures. 

Team Collaboration
  • Work closely with the Executive Chef and kitchen team to ensure smooth kitchen operations. 
  • Assist in training junior kitchen staff where necessary. 
  • Maintain professionalism and teamwork during busy service periods. 

KEY REQUIREMENT SKILLS AND QUALIFICATION
  • Diploma or Certificate in Culinary Arts or a related field.
  • Proven experience in a similar role specializing in Indian cuisine.
  • Strong knowledge of traditional and modern Indian cooking techniques.
  • Experience preparing a wide variety of Indian dishes including curries, tandoori items, breads, and rice dishes.
  • Ability to maintain consistency in food taste and presentation.
  • Good understanding of food safety and hygiene standards.
  • Ability to work efficiently under pressure in a fast-paced kitchen environment.
  • Strong organizational and time management skills.
  • Creativity and passion for culinary excellence.
