JOB DESCRIPTION
Job Purpose:
The Cost Controller must demonstrate exceptional skill and efficiency in maintaining inventory levels, processing purchase orders as required, tracking orders, and investigating variances. By working collaboratively with other departments, the Cost Controller ensures accurate inventory usage, analyzes costs, and assesses vendor relationships to maximize profitability and eliminate losses.
Responsibilities:
1. Ensure accountability for Mama Ashanti inventory by analyzing inventory movement reports and investigating variances.
2. Participate in daily physical stock counts for both the Kitchen and Bar.
3. Check, verify, and report voids in the POS systems.
4. Check, verify, and report discounts on the POS systems.
5. Analyze cost of sales and highlight anomalies.
6. Validate weekly inventory requisitions (compared to system on-hand stock) before purchases are made.
7. Ensure all purchases of inventory and consumables recorded in Back Office System (Hotsoft) are accurately captured and classified in the accounting application (Quickbooks).
8. Perform daily stock variance calculations for each Distribution Point in the Hotsoft system.
9. Ensure that material usage aligns with approved recipes and highlight any deviations.
10. Share daily shortages reports and identify staff responsible for deductions in both Kitchen and Bar.
11. Perform weekly stock variance calculations for each Cellar in Hotsoft.
12. Control Food and Beverage outlets in terms of wastage, pilferage, and efficiency.
13. Produce, circulate, and analyze purchase cost variance reports weekly.
14. Participate weekly in the requisition-making process.
15. Validate weekly inventory requisitions (compared to system on-hand stock) before purchases are made.
16. Participate in a monthly physical stock count.
17. Analyze monthly transaction reports from both Quickbooks and Hotsoft, and share noted discrepancies.
18. Update and share the Fixed Asset report on a monthly basis.
Qualifications & Experience
- Diploma/Degree in Accounting, Finance, Hospitality Management or a related field.
- CPA finalist qualification
- At least 3-5 years’ experience in cost control, inventory, stores or accounting, preferably within the hospitality industry.
- Strong knowledge of food and beverage costing, stock control and inventory management.
- Proficiency in Microsoft Excel and accounting/inventory systems.
- Strong analytical, numerical and problem-solving skills.
- High level of accuracy, integrity and attention to detail.
